Happy Melbourne

from the sights, sounds, tastes, and smells
that caught my attention living in Melbourne, Australia.

Home Made Granola

August 29, 2010 Sarah K

A daunting task...

but we've not found a cereal we're in love with.

The closest we've come is Brookfarm, muesli

but at $25 a pop, its a lot to pay for 'quite good'.

So, we decided to make our own and after some research

the boy's family recipe and few from around the web...

turns out its really easy.

preheat oven to 150C (300F)

Sauce

1/2 cup of walnut oil

(pick your oil, recipes I saw said Olive, and Canola)

1/2 cup of maple syrup

1/4 cup of brown sugar

(should have been honey, but we were out)

few shakes of cinnamon

if I'd had any, cardamon a few shakes again

1/2 tsp of salt

Crunchy

3 cups of oats preferably a mix (barley, rye, wheat)

1 -2 cups of nuts: (your fav here) I used:

slivered almonds,

whole almonds chunked w/ a knife

cashew nuts, again chunked w/ a knife

pumpkin seeds

sunflower seeds

Fruit

0-1 cups of fruit: (your fav here) I used:

dried apricots - chopped up

dried cherries

dried blueberries

to be healthy you could add:

bran

lecithin

phylum husks

your favorite hippy digestive aid

so...

Mix all the dry ingredients under "Crunchy"

and split into 2 bowls

Heat the first 5 ingredients "Sauce" in a sauce pan

melt sugars (honey) and then whisk till smooth

pour into a measuring jug ready to pour over dry ingredients

use 1/2 the sauce on one of the bowls of crunch ingredients

pour over and mix thoroughly so everything is coated

do the same with the second bowl

transfer everything to a large oven tray and spread out evenly

bake for 20-30 minutes giving it a little stir 2 or 3 times along the way

take out the oven, and sprinkle on the fruit

and any heat sensitive healthy additions

leave on the side to cool

try not to nibble too much, before you put in an airtight container.

yum.
